No I’m not talking about a fat, sweaty, old guy dressed up like the king of rock-n-roll. I’m talking about a sandwich. The other day I saw a food special on Elvis’ favorite sandwich. It sounded delicious, but it also sounded like the reason he died…so I came up with my own scaled down and hopefully healthy version of the Elvis sandwich, hence the name Elvis Impostor.

Here is my recipe for the Elvis Impostor:

2 slices of your favorite bread toasted – I’m using a store brand 9 grain bread – yum.

Spread about 2 tbsps of peanut butter on one slice of bread. On the other, spread butter, margarine, or some other type of buttery spread. I’m using Smart Balance.

Slice a banana and put the slices on the peanut butter side and drizzle with honey – a tsp or to taste.

Put the sandwich together and you have yourself an Elvis Impostor!
